A timeless French conserve made from carefully selected Atlantic sardines, prepared according to a historic recipe first created in 1932 in the fishing port of Quiberon, Brittany.
These sardines (Sardina pilchardus) are harvested at full maturity during the natural fishing season along the Atlantic coast. They are processed fresh within hours of landing and prepared by hand following traditional artisanal methods that have been preserved for generations.
Each sardine is gently cleaned, lightly brined, and delicately arranged by hand in the can after cooking. The fish are then covered with a fragrant extra-virgin olive oil that enhances their natural marine flavor while allowing the texture to remain firm, tender, and rich.
This classic preparation reflects the purest expression of traditional French sardine canning: simple ingredients, precise craftsmanship, and careful selection of fish at their peak quality.
Over time, the sardines slowly mature inside the tin as the olive oil naturally confits the fish. Much like a fine wine, properly stored sardine preserves can improve in texture and flavor for several years.
