Description

Carrig Bru is a premium Irish ale washed rind cheese matured by Sheridans Cheesemongers in County Meath, Ireland. Produced from young Carrigaline Farmhouse Cheese wheels made with Irish cow’s milk, each cheese is transferred to Sheridans’ specialist maturation rooms where it undergoes a unique ageing process.

Over 2–3 months, every wheel is repeatedly washed with traditional Irish ale, encouraging the development of a natural craggy rind and a complex microflora. While the ale does not impart a beer flavour, it enhances the maturation process, producing a silky, semi-firm texture with buttery richness, gentle savoury notes and remarkable depth of character.

The combination of farmhouse production, traditional affinage and Irish ale washing makes Carrig Bru one of Ireland’s most distinctive artisan cheeses.
