Saint Killian is an artisan soft ripened cow milk cheese produced by Wicklow Farmhouse Cheese in County Wicklow, Ireland and selected by Sheridans Cheesemongers. Crafted from premium Irish cow’s milk, this elegant cheese offers a refined expression of traditional soft-ripened cheesemaking.

Matured for 4–8 weeks, Saint Killian begins with a smooth, semi-soft texture and gradually develops into a rich, creamy cheese as it ripens. Its natural white rind contributes delicate mushroom aromas, while the paste delivers fresh grassy notes, buttery richness and a gentle savoury finish.
