Handcrafted artisan goat’s milk cheese from the Ossola Valley in Piemonte, Northern Italy. Description

Hidden among the granite peaks and ancient valleys of Piemonte, the Ossola Valley is one of Northern Italy’s most authentic mountain dairy regions. Located between Lake Maggiore and the Swiss border, this remarkable landscape has supported traditional goat farming for centuries. Alpine meadows, pristine mountain springs and an extraordinary diversity of wild herbs, grasses and flowers provide the perfect environment for producing exceptional goat’s milk.

It is within this unspoilt Alpine landscape that Crosta di Pane di Capra is crafted.

The name translates as “Goat Cheese with a Bread Crust”, referring to its beautifully matured natural rind, which develops the colour and rustic appearance of freshly baked country bread. This distinctive rind is created naturally during slow maturation rather than through artificial coatings, making each cheese a genuine expression of traditional artisan cheesemaking.

Selected by Castagna Mountain Cheese & Butter, a family-owned company based in Ornavasso, this cheese reflects generations of dedication to preserving the culinary traditions of Northern Italy. Rather than producing industrial cheeses, Castagna works with specialist mountain dairies that continue to respect seasonal milk production, traditional ageing techniques and regional recipes handed down through generations.

The goats supplying the milk graze freely across Alpine pastures rich in wild thyme, clover, mountain flowers and native grasses. This varied natural diet produces milk with remarkable aromatic complexity, subtle floral notes and exceptional freshness. These qualities remain evident in the finished cheese, giving Crosta di Pane di Capra a distinctive identity that reflects its place of origin.

Following traditional production, each wheel is slowly matured under carefully controlled conditions. As the cheese develops, its rustic natural rind forms while the interior becomes increasingly smooth and supple. Young cheeses display delicate lactic aromas and gentle citrus freshness, while further maturation brings richer flavours of cultured butter, roasted hazelnuts, fresh mushrooms and subtle earthy notes that linger elegantly on the palate.

Crosta di Pane di Capra is particularly valued for its versatility. Its balanced flavour makes it equally suitable for premium cheese boards, gourmet delicatessens, luxury hotel buffets and fine dining restaurants. It pairs beautifully with artisan sourdough bread, chestnut honey, Piemonte hazelnuts, ripe pears, dried figs and fruit preserves, while also complementing sparkling wines and elegant white wines from Northern Italy.

For professional chefs, the cheese performs exceptionally well in warm salads, roasted vegetable dishes, handmade pasta and refined seasonal menus where high-quality ingredients remain the focus.

For importers and premium retailers throughout Japan, Taiwan and South Korea, Crosta di Pane di Capra offers more than outstanding flavour. It represents the heritage of the Italian Alps, combining mountain terroir, artisan production and authentic regional identity in a cheese that tells a compelling story from its very first presentation.

Every wheel embodies the traditions of Piemonte’s mountain communities, preserving a style of cheesemaking that celebrates patience, craftsmanship and respect for nature rather than industrial efficiency.
