Killeen is an artisan Goat Milk Gouda-style cheese produced by Killeen Farmhouse in County Galway, Ireland and selected by Sheridans Cheesemongers. Made exclusively from fresh Irish goat’s milk, each 4.5kg wheel is coated with a breathable wax that allows the cheese to mature naturally while protecting its distinctive character.
When young, Killeen offers a clean, fresh and milky flavour with a smooth, brilliant white paste. As the cheese matures over several months, it develops increasingly complex notes of fruit, toasted nuts and caramel while maintaining the creamy texture that defines premium Gouda-style cheeses.
